Gastrollar: the program that transforms ‘coal cuisine’ into a living experience

In the Central Mountain of Asturias, fire was never just heat. It was the hearth that sustained mining families, the smoke that permeated the kitchens, the aroma of slow cooking that marked the rhythm of the day. It was tribe, culture, and sustenance. And it had a name: the llar, the traditional Asturian hearth around which people cooked, talked, and survived. The origin of everything.

Today, that same fire burns, but in a different form: Gastrollar. A program of gastronomic events and experiences in the Central Mountain that gathers that heritage and brings it to the present: a reality where the coal cuisine (embers, slow fire, local products, recipes that were never written down) becomes the guiding thread for presentations, workshops, and showcookings.

A space where chefs, producers, guisanderas (traditional female cooks), and gastronomy lovers sit at the same table to debate where the territory’s cuisine comes from and where it is going.

Gastrollar is not a one-day event. It is a project with roots, with purpose, and with a very clear identity.

Territorial rural cuisine. At the center of everything are local products, the flavors of this land, and, above all, las guisanderas: the culinary artisans who hold the gastronomic memory of the region in their hands. Their knowledge is not improvised… it is inherited, respected, and valued.

Coal cuisine. Embers, firewood, slow fire. A direct homage to the mining past that does not romanticize its harshness, but honors it by transforming it into flavor. In every dish there is history, and in every bite, territory.

Sustainability and zero-kilometer. The program is a clear commitment to local produce and the rural environment. Nothing comes from afar when what is nearby is extraordinary. A philosophy that, here, is a natural consequence of who they are and where they come from.

Professional gathering. Chefs, producers, communicators, and food lovers meet every year around workshops, presentations, and showcookings. Gastrollar is also a space for conversation and exchanging perspectives: tradition in dialogue with contemporary cuisine, without either losing its essence.

An experience to live, not just to read

If you travel to the Central Mountain and coincide with any of the Gastrollar program events, do not miss it. Here you will not find artificial spectacle or designer recipes disconnected from their surroundings. You will find authenticity: the pleasure of knowing where what you eat comes from, who cooked it, and what history lies behind each ingredient.

Because in the Central Mountain, nothing is understood without its history. And Gastrollar has found a way to tell it in the oldest and most honest language that exists: that of fire, time, and craftsmanship.
